According to an official blog post Toys for Bob CO-Studio head Paul Yan stated:

Everyone here at Toys for Bob is so proud to be reigniting the original Spyro trilogy after all these years. We're deeply committed to getting these games right, so we’ve decided to move the release date of Spyro Reignited Trilogy to November 13, 2018. I really hoped that you would be rescuing dragons and scorching Rhynocs sooner, but the Trilogy needs more love and care.  In November when you’re exploring the Dragon Realms, Avalar and the Forgotten Worlds, we know you’ll agree the extra time was worth the wait.

The adventure continues,

According to a source this the delay was due to the backlash after it became known that the physical version of the game would only include the first game and require the other 2 to be downloaded. The source told YongYea, that development for the first 2 games was completed but the third game required more time. In addition, the developers are pushing to include all 3 games on the disc. However, until we see an official confirmation that all 3 games are coming to the physical version this should be taken with a grain of salt.

Spyro Reignited Trilogy launches for Xbox One and PS4 on November 13th.
