The approach that holds up best in Going Medieval is a form of strip-mining. It takes a few steps to set up, but once the structure is in place your settlers can work through it without much trouble.

Building A Mineshaft That Works

Start by setting a Mine order for a 5x5 area and let your settlers clear it out. Once the first pit is done, build a Staircase so they can get down to the bottom. From there, dig down one more layer and add another Staircase to reach it. Then start running tunnels outward from that lower level in 3x3 sections, pushing out in different directions to cover as much ground as possible.

As you extend those tunnels, place Beams through the center of them roughly every 10 blocks. Beams and Pillars are what keep the ground above from coming down. Skip them and the tunnels will start to lose stability. In a bad collapse, a settler working in the tunnel can get caught underneath it and end up with serious injuries, including concussions that leave them out of action at the bottom of the shaft. Keep the supports going as you dig and it won't be a problem.
